Joanne Chang's Applewood Smoked BLT

A Grown-Ups BLT

I love BLTs. Every Friday, if my son has been good at school, we go for his favorite Friday lunch...Steak n' Shake. He loves it. Not being one for fast food I always order the BLT. Pretty straightforward not a lot of room for error. And it is always...okay. So when my husband got me Joanne Chang's new cookbook, Flour, Too, I was immediately smitten. I looked through it about five times before I noticed the BLT. Go figure. This is a grown-ups BLT.

She has a very simple recipe for making the Flour Focaccia bread (recipe to follow). It requires little preparation and very few ingredients, which is just about my favorite thing in the world. This awesomely, easy bread is topped with a little mayo, some applewood-smoked bacon, roasted tomatoes, and a drizzle of balsamic vinaigrette. Really could a BLT get much better? Me thinks not. 

I had to simplify it up a little due to time constraints, but I don't think the sandwich suffered much from it:) 

  4 Sandwiches: 
16 Slices thick-cut applewood-smoked bacon cooked crisply 
8 slices of bread (if you have time try the focaccia) 
baby arugula 
1 batch Roasted Tomatoes 
1 recipe Balsamic Vinaigrette

 Assemble sandwich: 

Toast bread, layer with mayo, a little arugula, single layer of tomatoes, drizzle with vinaigrette, and four slices of bacon.
