Chocolate Silk Frosting



I love making cakes.  I hate making frosting.  Most of the time the frosting just ends up being way too sweet for my liking.  But this is my most favorite straightforward chocolate frosting.  No special technique.  No special ingredients.  No anything.  Just an easy and most definitely tasty frosting.  I come back to this time and time and time again.  Plus it sets up nicely.  So you don't have to worry about traveling with this frosting.  It won't melt and turn into a sloppy mess in the back of your car.  Enjoy!!!

3c Semisweet Chocolate Chips
3/4c Dutch Process Cocoa
1 3/8c Confectioner's Sugar
2c Unsalted Butter
1t Vanilla Extract
1/8t Kosher Salt

Melt the chocolate chips in a double boiler and LET COOL COMPLETELY.

Cream the butter for 2 minutes.

Add the sugar and mix till smooth.

Add the cocoa powder and mix till smooth.  

Add the salt and vanilla.

Add the melted chocolate.

Mix till blended and shiny.  Don't over mix.
